Four Peaches & A Nectarine Cobbler

FINALLY! Peach season is upon us.  This winter was brutal and significantly effected our peach yield, but we're a "Glass is Half Full" kind of family so we're making the most of it.  

Josh adores Peach Cobbler and, frankly, I adore Josh so I do my darnest to keep him happy which is easy (mostly) because I love to bake.  

I made this with our 'seconds' from market the previous day, hence the witty moniker (a play on Four Weddings & a Funeral), but you can use all peaches without any problem.
    
                                               


4 Peaches & A Nectarine Cobbler

1/2 cup butter, melted
1 cup flour
2 cups sugar, divided
2 teaspoons of baking powder
1/4 teaspoon of salt
2/3 cup milk, cream or half & half
1 large egg
4 large fresh peaches, peeled and sliced
1 large nectarine, peeled and sliced
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg

Preheat oven to 350 degrees.  Place butter in 9 x 13 in oven to melt.  While butter melts smelling up your whole house, whisk together:  flour, 1 cup of sugar, soda & salt together.  Stir in milk & egg until blended. Remove pan from oven and pour flour mixture over melted butter. Do Not Stir! Set aside.

Gently toss peaches and nectarine with remaining 1 cup of sugar & spices.  Spread over prepared batter in pan.  DO NOT STIR.

Bake at 350 for 30-35 minutes until top in golden brown. 

Serve warm with fresh whipped cream or ice cream.
